TASTING THE TA’ĀM

Did you know that Algeria’s national dish is such a favorite of the people that it is commonly called Ta’ām which roughly translates to food? We’re talking about couscous! The dish couscous is usually made from semolina wheat, the coarse part of flour rich in protein, fiber, and other nutrients. Couscous is also the other name for semolina!

To prepare this dish, couscous grains are steamed over the vegetables or stew that are to accompany the final dish. This will make the couscous soft and fluffy. Then it is taken off the steamer to add butter or olive oil to make sure that the grains don’t stick to each other. The couscous then returns to the steamer for about 15 minutes.

As per choice, couscous can be served with meat, fish, or vegetables. It’s even used to make dessert. The dessert version contains dates, butter, hot milk, and cinnamon. How delicious does that sound!
